Historical Romance Holiday Cookie Hop

LAWMAN CINNAMON STAR COOKIES

I found these when looking for fun Wild West treats, but have since found out they are German Zimtsterne cookies. Either way, they look delicious!

INGREDIENTS

  • 400 g (14 oz.) ground hazelnuts (see note 1)
  • 200 g (7 oz.) marzipan
  • 2 egg whites
  • 75 g (¾ cup) powdered or confectioner’s sugar
  • 3 tsp cinnamon
  • 1 tsp lemon juice
  • for the frosting:
  • 1 large egg white
  • ½ tsp lemon juice
  • 175 g (1 + ½ cups) powdered or confectioner’s sugar, sifted

INSTRUCTIONS

  1. MAKE DOUGH: Place 300g (¾) of the hazelnuts in a mixing bowl with all the other dough ingredients and use your hands or a wooden spoon to knead to a smooth dough. When the dough is smooth and pliable after 3-4 minutes, flatten it into a disk, wrap it in cling film and place it in the fridge for 1 hour.
  2. ROLL DOUGH: After an hour, remove the dough from the fridge and roll it out to 1 cm (just more than 1/3 in.) thickness on either a work surface sprinkled with ground nuts or in a large freezer bag with the long sides cut open. Return to the fridge (or freezer if your freezer is big enough!) while you prepare the frosting.
  3. PREPARE AND MAKE FROSTING: Heat the oven to 120°C / 250°F / Gas ½ and line two oven trays with baking parchment paper. In a clean bowl using an electric beater, beat the egg white and lemon juice until it is light and fluffy. Add the powdered sugar 1 tablespoon at a time until it is completely incorporated. Continue beating for 4-5 minutes until the mixture is thick and glossy.
  4. CUT COOKIES: Remove the cookie dough from the fridge or freezer and cut as many star shapes as possible with an approx 4cm (1.5 in.) star-shaped cutter. Place them on the prepared baking sheets as you go. Re-roll the cookie dough to cut out as many as possible, adding some of the reserved ground nuts as necessary.
  5. FROST COOKIES: Use a spoon or pastry brush to spread a thick layer of the frosting on the top of the cookies, then bake, one tray at a time on the bottom shelf of the oven for 20 minutes.
  6. COOL: Allow to cool on the tray for 5 minutes before transferring to a rack to cool completely. Store in a metal cookie tin (not an airtight container!) for up to 4 weeks.

NOTES

  1. If you can’t get ground hazelnuts use ground whole almonds (almond meal) or almond flour instead. Make sure to use whole ground almonds as they will give the biscuits the correct texture. It’s easy enough to make this yourself in the food processor if you can’t find any at the grocery store.
  2. You may have some ground nuts left over, store them in an airtight container in the freezer until you need them again

Why are sheriff’s badges shaped like stars?

The Old Western lawman would often wear a star badge (with 5-7 points depending on when and where we are talking) made from used tin cans or other metal. Stars have always been a symbol of power and protection, which seems to be at least one of the reasons lawmen began to wear them. Not all lawmen wore them. Those in smaller locales just didn’t need to – everyone knew who they were and that they were in charge. But for those who could afford them or who needed to set themselves apart, their star badge was displayed proudly.

Some sources say that the points of the stars have religious meanings. Others disagree. Either way, that star-shaped badge will always be connected to the old Wild West lawman.
